King Market Cooks: An Outdoor Classroom Series
Portland Farmers Market presents a four part series of cooking classes at our King Farmers Market, surrounded by farm fresh food and taught by talented local chefs.
All classes are from 11am to noon, and require advanced registration via Eventbrite
June 11: Cooking with Indian Spices with Kusuma Rao of Ruchikala
July 9: Summer Berry Shortcake in a Jar with Paige Common of Eatin’ Alive
August 13: Hiyashi Chuka Ramen: A Cold Summer Ramen with Jane Hashimawari of Ippai PDX
September 10: Fall Bone Broth with Tressa Yellig of Broth Bar
Tickets for the first class with Kusuma Rao of Ruchikala:
Kusuma Rao of Ruchikala will demonstrate a “thadka” (whole spice) technique, using the infused oil to prepare vegetables fresh from the market for a simple Indian inspired meal. The second part of the class will go over the basics of how to build a curry and layer spices using a ground spice blend. Participants will each get a jar of Kusuma’s spice blend to take home and pair with fresh market produce. Come early or stay later to shop the market!
About the Chef:
Bred by traditional Indian cuisine, romanced by Sonoran Mexican street food and professionally blurring the lines of all-that and in-between.
Growing up in her mother’s kitchen in Tucson, AZ Kusuma began cooking at a very young age experimenting with spices from all over the world. Through her culinary career she has honed her techniques to create inspiring dishes for her clients. Utterly obsessed with perfection, she strives to create works of art on every plate.
She has worked as a restaurant consultant and menu developer and writes and ponders passionately about food wherever she goes.
