Boxcarr Handmade Cheese
Boxcarr Handmade Cheese is a small artisan cheese company located in Cedar Grove, North Carolina. Inspired by Italian cheeses, siblings Samantha and Aaron Genke began making cheese in 2015. Today they make ten different cheeses using both cow and goat’s milk sourced from neighboring dairies.
We are currently carrying three cheeses from Boxcarr, Cottonseed, Roise’s Robiola, and Nimble.
Cottonseed is modeled after an Italian cheese called Scimudin. It is made with a blend of cow and goat’s milk and has a fluffy snow-like bloomy rind. When Cottonseed is young it is a bit crumbly with notes of fresh milk and yogurt, as it ages it develops a creamy runny paste and becomes rich and buttery.
Rosie’s Robiola resembles the mixed milk soft ripened cheeses of Piedmont. Again, cow and goat’s milk come together to make this gooey, mushroomy cheese. A delicate washing adds a touch of funk.
Nimble was inspired by Lombardy’s rich and pungent Taleggio. Dark beer from North Carolina’s Mystery Brewing is added to the mixture of raw cow and goat milk as the cheese is being made. The dark beer is also used to wash the rind of Nimble giving it a rich, dense paste and a sticky, stinky orange rind.

Little Beast Beer Tasting, Thursday, October 12th, 5:30-7:30 pm
Please join us tonight for a fun tasting of three very unique and delicious beers from our friends at Little Beast Brewing.
Founder and veteran brewer, Charles Porter, has a knack for harnessing the little beasts or microflora that ferment our beer, capturing their untamed beauty and producing highly craveable and totally delicious craft beer.
Rooted in old world technique, inspired by the abundance of Oregon’s edible landscape and influenced by American brewing ingenuity, we craft our beer naturally with diverse cultures, including Saccharomyces, Brettanomyces, Lactobacillus, and wild flora. We age in stainless steel and wood barrels, blend vintages and bottle-condition to create the finest finished product.
Here is the line up:
Little Beast Bes, Tart Wheat Ale
Our tart wheat Ale is brewed honoring age-old traditions using Belgian malts, Noble hops, chamomile flowers and pristine Oregon water. Fermented with a blend of unique Sacchromyces yeast and then conditioned with Lactobacillus, this refreshing wheat beer is bright and balanced.
Little Beast Fera, American Brett Ale
Our inaugural farmhouse saison is brewed using a mix of European malts, Pacific Northwest hops and pristine Oregon water and then fermented entirely with Brettanomyces yeast. This lively Brett Ale drinks dry and crisp with a mildly tart, fruity and complex finish.
Little Beast Dream State, Foeder-Aged Ale with Strawberries
Dream State is a brand new seasonal release from Little Beast. After the foeder beer aged for several months brewers racked it onto over 950 pounds of hand-picked fresh Oregon strawberries from Rossi Farms in Northeast Portland. They picked about half of the berries themselves with the help of several volunteers. The name “Dream State” comes from that state of going in and out of dreams, where you want to go back the dream you were just in. The beer makes you want to go back to that flavor and savor it.
As usual the tasting is complimentary and the wines are discounted tomorrow night only. See you there!
