Recipe: French toast casserole

This French toast casserole features golden slices of our homemade English muffin bread (use whatever leftover bread you have on hand!) enriched with a blend of eggs, milk, and cream cheese, highlighted by blueberries, maple syrup, and hints of cinnamon and vanilla. It’s delicious and it reheats beautifully. It’s a great use for leftover bread like baguette.

You can assemble this dish the night before it’s baked, making it a great choice for a brunch celebration.

Take me to the recipe.

Flying Elephants at PDX update

Who’s looking forward to hoping on a plane this year? Things look a whole lot different at the airport these days. As part of the new main terminal construction, we’ve closed our old location–but we are opening TWO new stores.

Now you can grab a jambon et fromage in our small grab-and-go downstairs in baggage claim when you arrive home (open!). And we’ll still be here to bid you adieu at our larger counter-service location, which is under construction and will open upstairs, pre-security, in May.

If you haven’t seen the gorgeous new airport designs filled with light, trees, and local art, you can check them out at the Portland International Airport website.

We’ll update our website as things change.
