We learned lots of things in our first bake last month. We are improving our process to help make ourselves more efficient. Today are preparing to make over a thousand bagels for this weekend! We have not made that many since we were in full swing down at the PSU farmers market many years ago. It is exciting to see the restaurant space transforming in these awkward times.
