Michael Recchiuti Cherries Two Ways – Portland – A combination of dried Michigan cherries and wild Italian cherries drenched in dark chocolate with a light dusting of cocoa powder. Violet says, “The cherries are are sweet, smooth, and bursting with tangy flavors that only Recchiuti could make better by wrapping them in dark chocolate. The chocolate easily blends with the cherry creating a silky texture that melts evenly and slowly, allowing the tartness to come through like an arrow.” This product is available in Portland and online only.
Amma 60% Dark Chocolate – This chocolate is made in Brazil with Brazilian cacao. Though its made with nothing but cacao and sugar, it tastes like they blended in dried fruit and powdered walnut. That is the power of a well grown and roasted cacao.
Cherry Plum Japanese Sea Salt – Cherry Plum salt is based on a culinary institution in Japan, the Umeboshi (salt-preserved or dried plum). Traditionally homemade, the Umeboshi is made every year by simply packing plums in a jar with sea salt. Twenty to thirty percent of the plum liquid will be extracted from the plum as plum vinegar. The Meadow’s Cherry Plum Salt is extracted from this plum vinegar. This salt is essential for rice balls, rice noodles, rice candies, and rice krispie treats. Good on foods that don’t contain rice as well. A touch of salt-tangy plum in whatever your tangy plum of a heart desires.
Askinosie Sipping Chocolate – Don’t call it ‘hot chocolate’. Typical hot chocolate is a bit of cacao powder mixed up with sugar. This is something wholly different, morsels of actual 77% dark chocolate, the perfect size for melting into whole milk or heavy cream. A wonderfully indulgent treat for these cold winter months.
Bonnat Haiti 75% Dark Chocolate – Master chocolate makers Raymond and Stéphane Bonnat have sculpted a delightful single-origin bar made from Haitian cacao. The bar has a particularly rich and smooth texture thanks to the higher portions of cacao butter that Bonnat uses in their chocolate. The rich flavor is highlighted with a note of citrus.
Dr. Adam Elmegirab’s Tea Pot Bitters – Tea is enjoyed around the world for both its taste and medicinal properties. Likewise, the history of bitters is rooted in both the medicinal and culinary worlds. Adam Elmegirab’s Teapot Bitters are inspired by these combined histories, by beverages where tea and spice combine such as Masala Chia and spiced milk tea.
Liber & Co Texas Grapefruit – This shrub combines Rio Star grapefruits, coconut vinegar, and a hint of allspice. Rio Star grapefruits are bright red and very sweet. Turning them into a shrub preserves their intense fruit essence and tart acidity and brings it to your cocktail or beverage.
Catskill Provisions Grade A Maple Syrup – Made in the Catskill mountains of New York state, this syrup is delicate and creamy with a light nutty flavor and a hint of toasted marshmallow. It is heated at 180-200 degrees and filtered 12 times through natural paper to eliminate “syrup sand” and boost clarity.
