Smokey Yet Sweet: Saint Cupcake’s Surprising Treats!

Saint Cupcake is known for serving seasonal sweet and savory creations the whole community gathers for. Owner Jami Curl is baking in small batches as if baking at home and using recipes passed down from “gramma Dot.” Though her cookies are chewy, her ice cream refreshing, and her cupcakes like soft pillows; Jami’s treats are far from dainty. Jami spends countless hours experimenting with unconventional methods and ingredients such as smoking flour, sugar, and exotic spices.

When Jami met Michael Maynard, a small-town fireman and owner of Beaver Camp Sausage Company where he specializes in smoking game meat, she saw an opportunity. Jami asked Michael if he would ever consider smoking flour for her bakery thus beginning a long-standing relationship resulting in eccentric delights. Using a Smoke Daddy Smoker and pairing different wood chips with different ingredients, Michael began with flour and now smokes everything from varying types of sugar to cinnamon and vanilla for the bakery.

The original smoked delight is Jami’s Alder-Smoked Chocolate Chip Cookie which is a decadent chocolate chip cookie baked with Alder wood smoked flour. The result, a luscious chocolate chip cookie that pairs perfectly with whiskey as well as milk. Jami also showcases her smoked creations in her recently launched “Melty Goods” ice cream.
