Redefining Hash: Brunch at Metrovino

Redefining Hash

StrolI into Metrovino for a Brunch That Rethinks The Portland Staple

Portland, Ore. (November 12th, 2012) –This winter, Metrovino introduces a brunch menu that redefines the quintessential Portland meal. Starting with classic dishes that are brunch menu staples – “hash,” eggs Benedict, coffee cocktails – owner Todd Steele and executive chef Dustin See have transformed each offering into a refined dish, each with its own unusual twist.

Pork belly hash arrives as a sauté of spaghetti squash and bright green Brussels sprout leaves topped with a perfectly poached egg. Golden nuggets of crisp pork belly adorn the vegetables and the whole is finished with a sherry cream reduction – a classic sauce practically unseen at brunch.

Metrovino’s eggs Benedict is a surprising break from the norm: a breakfast inspired by the very best Duck a l’Orange. House-made English muffins are topped with meltingly soft duck rillettes. In place of the usual Hollandaise, a glaze of bright, orange zest flecked sauce Maltaise drapes over the eggs.

Every detail is given the Metrovino touch. A side of grapefruit arrives at the table with a crunchy, hard caramel brulee. Desire a bit of morning bubbly? Steele offers a flight of three sparkling wines from his famed Enomatic wine system, which allows him to offer over 90 wines by the glass.

Barman Jacob Grier has turned his talents to brunch, as well. Balancing booze and the morning wake-up-call, Grier created the “Quick Little Pick Me Up.” A seemingly simple coffee infused Ramazzotti, the mild Italian Amaro brings out the warm complexity of locally roasted beans and leaves the morning drinker both caffeinated and relaxed, and ready for a perfect Portland Sunday.

Metrovino is open for Brunch from 10 a.m. to 2 p.m. on Sundays. Call the restaurant at 503.517.7778 for reservations or go to http://metrovinopdx.com/reservations.html.
