In Season

November brings to mind the cornucopia of fall produce- it’s time to take full advantage of it in the kitchen. Look for winter squash, potatoes, onions, carrots and cabbages in the market. You’ll also find lots of fresh greens like kale, mustard greens and bok choy, as well as broccoli and cauliflower. Fall also brings juicy apples of all varieties, pears, quince and of course, pumpkins! Mushrooms are in full bloom, and can be so versatile. We’re featuring a class on mushrooms on November 17, taught by Chef Dan Brophy, our favorite mushroom forager.  For a cool, wet fall evening, nothing is more satisfying than a succulent roast surrounded by root vegetables (and served with great wine, of course). On the 25th, there will be a cooking class on root vegetables to give you more ideas for bringing out the best in these often under-rated treats.

It’s time to get ready for the holidays and enjoy the best of November’s fantastic flavours. There’s so much to look forward to this month, from our holiday baking classes to the delicious fresh seafood in season, to our Thanksgiving preparation classes. In response to customer requests, we’re offering three seafood classes this month. Whether you’re craving shellfish (NW Shellfish class on November 10) or clams and mussels (Mollusk class on November 30), or just seafood in general (try our November 15th Seafood Cookery class), there’s a class designed for you. Holiday Baking
Holiday baking It’s that season again- time to crank up the oven and start baking! There’s nothing quite as satisfying , nor as fragrant, as homemade breads and pastries. Our annual November Cookie Exchange will be held the 24th this year, with a repeat of it in December. Keep in mind, this class fills up fast so sign up soon!
Want to brush up on more than just cookie baking skills? Our Holiday Baking class will be held on November 10th, and features a variety of old and new (or soon to become) favorites.

Turkey on platterThanksgiving usually prompts one of two reactions; there’s the joyful thought of delicious food and great company, or the fearful thoughts of being unprepared and overwhelmed. This year, don’t give in to the latter; plan ahead and ensure that you have low stress and nothing but happy memories and lots of fun. A New Face in the Kitchen

Chef Earl Frederick

Chef Earl FrederickEarl Frederick is the new chef in our kitchen. He graduated with a degree in Culinary Arts from the prestigious Johnson & Wales University in Providence, RI. He later received Hospitality Management training at The University of Hawaii at Manoa and a Bachelor’s Degree in Business Administration from Warner Pacific College in Portland, Oregon.

Chef Earl currently teaches at-risk youth how to cook and is the co-founder of The Portland Kitchen (non-profit 501c3), an emerging culinary after-school program providing high school youth the business skills and nutritional education needed to budget, plan and prepare for life.

Earl’s next class will showcase his love of Caribbean cooking; the class is on November 27.

You know how much we love EVOO and great vinegars… we’ve discovered some amazing selections at The Oilerie in Lake Oswego, so we’ve teamed up with them to use their products in our classes. You can savor their buttery EVOO, the delicious 25-year old Balsamic vinegar, and much, much more! You’re in for a treat…

 

Kitchen Upgrades
We’ve just got in a batch of new induction burners to give us more flexibility in class. We’ve also installed a brand new dishwasher to make our clean-up quicker and easier. You may not notice it but we certainly do!
