Elk is hotter than ever and will be featured on Bizarre Foods America with Andrew Zimmern! This hearty protein was also the star of Nicky USA’s 12th annual Wild About Game where Seattle Chef Nathan Lockwood of Altura prepared Cavatellie Cacciatore and Roosevelt Elk Crudo taking home top prize. Despite being the largest species of elk in North America, Roosevelt, Rocky Mountain and Manitoban elk are among the best in the country. A versatile meat and raised locally, elk meat is lean, tender, juicy and high in protein.
 
Rabbit is Nicky’s top seller and the product the company was built on. The same rabbit that is available to consumers is served on the hottest menus across the city from Lincoln to Paley’s Place. Raised on local farms, each Nicky USA rabbit eats a diet of corn, soy, wheat and supplemented with alfalfa keeping with their natural foraging diet. Their reputation for unmistakable flavor can be heard all over the west coast.
 
Referred to as “the meat of Roman emperors,” Fallow venison raised in Oregon along the riverbanks is mildly gamey, possessing a beef-like flavor with half the fat! Prized by hunters throughout the ages, venison is the most coveted meat of fall as its availability is limited to September through November!

Silvies Valley uses a particular heritage cross of cow that is smaller and better adapted to fattening on wild grasses and clover versus corn, alfalfa or grain. This product is all-natural and the cows are hormone and antibiotic free.
