Sustainably raised in Washington, Tails and Trotters Northwest hazelnut-finished pigs are some of the best cuts of pork in the region. They are fed a diverse diet until their last 60-90 days when the pigs gain their uniquely Northwest flavor by feeding on hazelnuts. Nicky USA has partnered with Tails and Trotters since 2009, and will now bring their bacon and ham to market. These cured meats best feature the flavor of hazelnuts in the pork.
Both Tails & Trotters ham and bacon are delicately cured to allow the unique flavor of their hazelnut pigs to shine through. The three sizes of Tails and Trotters hams are all whole muscle hams with a flavor and texture that provides the best option for dinner or a sandwich. The hams are cured with only sugar, salt, water and sodium nitrate, and lightly smoked over applewood chips.
Tails & Trotters bacon is made from hazelnut-finished pig bellies, then dry cured with sugar, salt and sodium nitrite, and smoked over applewood. Dry-curing bacon brings out the nut-fed pork flavor, and the bacon does not shrink as much when cooked as wet-cured bacon tends to.
