More Than 100 Sparkling Wines Will Be Flowing During Pix Pâtisserie’s Bubbly Spectacular

Annual event will give guests the chance to taste their way through Pix’s award winning Champagne and sparkling wine lists throughout December

PORTLAND, Ore. (Sept. 29, 2011) – December offers many reasons to raise a glass of bubbly and Pix Pâtisserie’s N. Williams location adds one more celebration to the list with their 4th annual Bubbly Spectacular , which will feature more than 100 sparkling wines from white and rosé to sweet and dry. Whether you are on a shoe string budget or don’t mind splurging for bubbles, Pix has sparklers from every region including Prosecco and Lambrusco from Italy, Champagne and Blanquette de Limoux in France, Rosé from Tasmania and some local bubbles  from Oregon, just to name a few. Fans of Grower Champagne will be hard pressed to find a larger list in the nation!

Pix recently won Wine Spectator’s 2011 Award of Excellence for their wine program and was mentioned on Eater.com as one of four of the country’s most imaginative Champagne and sparkling wine lists from restaurants across the country. Glass pours will change daily and be announced on Pix’s Twitter page,  @PixPastisserie  Seven tasting events will be featured throughout December along with many other “bubbly” events happening all month long at Pix’s N. Williams location to help guests explore all that sparkling wine has to offer.

Each week we will have two sparkling wines in the ring. (Yes, we really have a wrestling ring.) For a nominal tasting fee guests can go head to head with both wines and vote on their favorite. Could the Cava over take the Champagne? Will the Blanquette de Limoux crush the Prosecco? Can Argyle hold its weight? You decide.

SPOTLIGHT SERIES
Pix will spotlight a single Champagne producer that owner Cheryl Wakerhauser had the opportunity to visit earlier this year. Three Selosse protégés are featured in this evening’s tasting - Jérôme Prévost, Olivier Collin (Ulysse Collin) and Alexandre Chartogne (Chartogne-Taillet). Their wines are exceptional, full of character and come with a reasonable price tag (for now!) This is not one to miss for true grower Champagne fans! $25

SPECIAL CLUB NIGHT!!! 7:00PM – Midnight
This is a very special evening. Champagne’s Spécial Club is a group of Grower-Producers who all have the common goal of promoting the expression of terroir in the region. The members serve as a jury of their peers, voting for the best Champagne of certain vintages, which is put into a stout bottle only to be used by those that make the mark. These are truly sparklers of exceptional quality! Six Spécial Clubs available as a blind flight and by the glass. You won’t find a tasting like this anywhere else! $28 per flight of six 1oz pours. For more information on the Spécial Club:www.clubtresorsdechampagne.com

Friday, December 23
ROSÉ CHAMPAGNE  6:30PM – 8:00PM
Did you know that much of the rosé made in Champagne is done by blending red wine with white? It is the only AOC in France that allows blending to make rosé instead of using the saignée method in which the wine is in contact with its skins to absorb color. We’ll taste two blended Champagnes alongside two saignée Champagnes. $15

Wednesday, December 28
SPOTLIGHT SERIES: Philippe Aubry of L. Aubry Fils  6:30PM – 8:00PM

Friday, December 30
AUBE PRODUCERS  6:30PM – 8:00PM
The Aube (or Côte des Bar) is a two hour drive from the central towns of Reims and Epernay. In the early 1900’s, the region tried to exclude the Aube from the AOC appellation. Riots ensued and they were able to keep the Champagne status. Despite the fact they have never been awarded a single Grand Cru or Premier cru designation for their villages, some producers are giving their Northern neighbors a run for their money. (And for less of yourmoney!) Tasting of four producers $20
