wines to be sampled:

CAVES BOURDY CÔTES DU JURA BLANC 2007
The oldest vines in this bottling are from 1904. The Cotes du Jura blanc is made using no new wood and no filtration and is produced in OLD barrels;  It is a dry, lean, chalky wine, brimming with minerality; an individual wine of depth, complexity and energy. $23.50
CAVES BOURDY CÔTES DU JURA ROUGE 2008
Juras three primary red grapes, Poulsard, Trousseau and Pinot noir, share the characteristic of a very bearable lightness of being;  as has been done for centuries, it is produced from co-fermented vines of all three grapes and aged nearly four years in old casks before release.  juicy, dry, pure and with steely definition and superior length. a beautiful archetype of a red wine from the Jura. $24.00
CAVES BOURDY CRÉMANT DU JURA NV
The AOC of Crémant du Jura is a specialty, and outside of far more expensive Champagne appellation, is considered the best alternative in France to both those on a budget and those having extraordinarily refined taste! Friends wont let friends go without it. $23.00
CAVES BOURDY CÔTES DU JURA SAVAGNIN 2007
Savagnin, while an apparent native and “specialty grape” from the Jura, comes from the Traminer grape and its birthplace in Alto-adiges village of Tramin…. The exotically perfumed Côtes du Jura Savagnin 2007 from Jean-François is pungently expressive and toward an oxidative style, offering spice, toasty bread scents and a compelling nutty aspect when paired with the right food makes for a fabulous culinary experience. $33.00
CAVES BOURDY VIN JAUNE AOC 2004
Nutty and dry with a long finish, here is the description from Jean-François himself:
For centuries, these wines have been reputed to be amongst the best  if not the best dry white wines in the world, because of the unrivaled strength and complexity of their perfumes. It is actually very difficult to appreciate any other wines after having tasted a Vin Jaune, because of its effects on the taste buds.
$91.00CAVES BOURDY GALLANT DES ABBESSES
We have come across no wine quite like this before. The Bourdy Gallant des Abesses is made from the unusually scrumptious Macvin of Jura (see below) and contains an additive blend of twenty-five spices from India and the east. Lovely and lively and slightly sweet, Gallant des Abbesses is not especially alcoholic tasting, but more in the vein of fresh fruit and with a tawny edge. Uniquely delicious. Less than 100 cases are exported to America. $72.00

CAVES BOURDY “MACVIN DU JURA AOC NV”
Macvin du Jura is another true specialty wine of the region, all five Jura grapes, Savagnin, Chardonnay, Pinot noir, Trousseau and Poulsard are allowed, but not as wine, only through use of the grape must (unfermented juice from the pressed grapes) to which a one third share of Marc (distilled brandy from grape pulp, skins and stems) is added. Macvin must come from using only Jura Marc and Jura grapes and needs to find an alcohol level between 16-22% to qualify. $33.00
