Hog & Rye Dinner Ushering in 2012 at Gilt Club

PORTLAND, OR – December 19, 2011 – Even with the holidays still looming we’ve thought ahead to the new year. Look for our special Hog & Rye Dinner on Saturday January 14, 2012. A Special 5 course experience crafted by Chef Carriker, Bartenders Colin Pomeroy and Jenna Wazny and R1Ultra-Premium Straight Rye Whiskey.

Hog and Rye Special Pairing Menu

Saturday January 14th, 2012

$55 per person


First:
Spicy Thai pork spareribs, Mandarin orange smoked foie gras,

Potted pork rillettes

Pairing: R1 Rye, Aquavit, Cynar, lemon, peach & orange bitters w/ orange peel garnish


Second:
Pulled pork on rare scallops, mustard butter sauce, pumpkin seed oil, pickled vegetables

Pairing: R1 Rye, Imbue, Lemon & spiced pomegranate syrup w/ lemon peel garnish


Third:
Pork crackling salad, cilantro, chilies, snow peas, and lime-fish sauce dressing

Pairing: Sazerac w/ Carriker’s absinthe w/ lemon peel garnish

 

Fourth: Cider braised pork cheeks with celeriac purée, crispy shallots, Oregon hops,

and cider braise reduction

Pairing: Steel Neil w/ R1 w/ orange peel garnish


Fifth:
Sour cherry clafoutis with maple candied bacon, and “grand ma” whipped cream

Pairing: R1 Rye, Tuaca, Torani Amer, cherry bitters with orange peel and cherry

About The Gilt Club:

The Gilt Club’s house cocktail selection varies with the season, and most of the drinks are composed with house infused liquor and mixed with fresh juices squeezed to order.

Wearing taffeta may be a bit over the top, but anything goes here at this decadent restaurant that stays open deep into the night on the edge of the Pearl District.
