Five-Course Meal Brings Together French-American Flavors
PORTLAND, Ore. (Sept. 14, 2012) – On Friday, Oct. 5, Executive Chef Michael Stanton of The Heathman Restaurant and Bar will host Hardy Cognac for a delectable five-course dinner pairing French-American cuisine with hand-selected reserve Cognacs. Among the tastings and dishes, this event will also feature special guest speaker Ms. Benedicte Hardy from Hardy Cognac.
The evening will begin with a reception with hors d’oeuvres and champagne at 6:30 p.m., followed at 7:00 p.m. by a five-course meal including:
First Course
Fois Gras Torchon
cognac marinated fig jam, brioche
Paired with Hardy Pineau Des Charentes
Second Course
Gnocchi Saucisson Sec
house made gnocchi, salami, patty pan squash, snap pea, cognac butter sauce
Paired with Hardy VSOP Cognac
Third Course
Roast Pekin Duck
wild rice confit crepe, glazed baby turnip, cognac glazed plum sauce
Paired with Hardy Napoleon Cognac, 15 years old
Fourth Course
Cattail Creek Lamb Loin
coffee dusted, chanterelle, black truffle frisee salad
Paired with Hardy X.O. Cognac, 25 years old
Fifth Course
Raspberry Chocolate Purse
chocolate cake with ganache and local raspberries, wrapped in feuille de brik
Paired with Hardy Noces d’Or Cognac, 50 years old
Finale
Hardy Perfection Cognac 140 year old
