Troy and Cathy’s collaboration on a “Piedmontese Pasta Feast” draws on both chefs’ passion for handmade pasta and the region of Italy best known for their luscious, egg yolk rich pastas, Piedmonte.

 

Troy and Cathy will prepare the three most famous pastas of the region:

 

Golden tajarin is a hand cut angel hair type pasta that needs little more than butter and sage to give the impression of eating ethereal flavored air.

 

Agnolotti dal Plin are the pinky nail sized ravioli popular in the Barolo and Barbaresco wine region known as the Langhe. Filled with roasted pork and chicken, they are different than ravioli due to their signature pleat, known as the ‘plin,’ that traps in the succulent braising juices that serve as the pasta’s sauce.

 

Gnocchi alla Bava are the traditonial gnocchi of the region sauced with the region’s rich alpine cheese, Fontina Valle d’Aosta.

 

The meal will commence with an assortment of traditional antipasti and conclude with a pistachio semifreddo and brown sugar roasted figs.

 

Cathy studied Piedmontese pasta making with the Albarella family at Osteria Antica Torre in Barbaresco in the Langhe and Troy perfected his technique a the famous Los Angeles restaurant, Patina.
