Welcomes Halley Connelly as Bar Manager
PORTLAND, Ore. (October 26, 2016) – With new Bar Manager Halley Connelly helming its beverage program, Portland’s Castagna restaurant has unveiled a new cocktail menu tailored to the cold, crisp weather of fall. With craft cocktails showcasing autumn flavors, from the warm spice of the Starlet (bourbon, lime juice, sweet vermouth, and spiced plum syrup) to the rich texture of the Clear and Present (gin, white vermouth, and poached pear syrup), Castagna is a must-visit for Portland cocktail-lovers this season.
A veteran of Portland’s restaurant scene since 2006, and most recently the bar manager at Kask, Connelly is focused on precision, creativity, and local ingredients. A native Oregonian, Connelly plays off of the natural bounty of the Northwest, working closely with chef Justin Woodward to highlight the freshest, most unique, and most complementary ingredients for each season. “I was floored by the way Justin and the team are able to layer flavors and textures into their food,” she says. Cocktails like the Clear and Present, for instance, were specifically created to pair with Woodward’s cuisine: “The flavors are light, but weighty on the palate, which makes it a fantastic pairing for some of the richer courses in the dining room.”
In addition to creating complex house-made syrups, Connelly and Wine Director Brent Braun have also worked their shared love for vermouths and sherries into the bar menu, integrating unique flavors such as Spain’s Atxa vermouth and Pineau des Charentes, a French aperitif, into numerous offerings like Grandma’s Medicine (Atxa vermouth, seltzer, grenadine, and a cherry). Still, Connelly’s personal favorite is a well-made Sazerac—a cocktail she’ll happily make for customers.
The new bar menu is available with dinner in the Castagna dining room as well as Café Castagna next door, with additional Café-only options. During happy hour in the Café (5-6pm and 9pm-close Tuesday through Friday, 5pm-close on Sundays), several specialty cocktails are also available, as well as discounted draft beers and hand-selected wine pours. All pair perfectly with the excellent $8 house burger.
